Some Italian rules are not meant to be broken....!!

Some pastas are not ideal with some sauces.  Please note the following:

*Olive oil and clam sauces do not pair with our homemade pasta, as the pasta tend to become chewy, and clumpy.

**Puttanesca sauce, although very traditional and delicious, pairing it with flavored or filled pasta will overshadow the flavor of the filling.  Please pair with unflavored pasta only.

 

A Southern Italian tradition... Grated cheese is not served over seafood dishes. Shoud you like cheese for your seafood dish, we will be happy to serve it on the side, but we do not break our traditional rules.
